RECIPE: Roasted Whole Chicken Place 1 whole chicken (about 3 pounds) on rack in foil-lined roasting pan. Brush with oil. Coat evenly with 2 tbsp rub. Roast in preheated 375F oven for 1 to 1 ½ hours until cooked through. Makes 6 servings RECIPE: Roasted Chicken with Potatoes Mix 2 tbsp each rub and oil in a large bowl. Add 2 pounds bone-in chicken thighs, skin removed, and 1 ½ pounds potatoes, cubed; toss to coat well. Arrange in single layer on foil-lined large baking pan sprayed with nonstick cooking spray.
